Kale is my go-to side dish. There are so many ways you can make it! Originally I was going to make raw kale with a dijon dressing, but in the end, decided to keep it simple. I was also feeling lazy by the time we got to the kale. But it worked out, and I think it balanced the heaviness of the rest of the brunch well.

ingredients

  • 1 bunch kale
  • 2 cloves garlic, minced
  • 1 lemon
  • 1 cup flax seeds

instrux

  1. Wash and strip kale
  2. Heat up a little olive oil in a big pan, then throw in garlic and the kale
  3. Saute until the kale over medium heat until it turns bright green, then remove quickly. This usually takes 2-3 minutes.
  4. Put in a large bowl, and mix with the flax seeds. Then squeeze the juice from the lemon and mix. 

SERVES: 6-8
