Healthy Hash Browns 'n Collards
Since my diet went 21 years sans potatoes, I’ve had little experience cooking potatoes, in any form. Or eating them. Now I’ve probably had hash browns before, but they were not terribly memorable. Then on Christmas Day, in an adorable and much-appreciated effort to serve me an entirely vegan breakfast, my aunt made a delicious crop of hash browns.

Puffy Pancakes
The second I saw this post in my Google Reader, I knew it was going to be the next brvnch staple. I think they spoke for themselves. They are finicky though - your measurements need to be pretty exact. The batter should be thick, like cake (that’s what she said?) and your heat level matters, otherwise they’ll burn a little before they puff (but they’ll still be yummy!)

Simple Kale
Kale is my go-to side dish. There are so many ways you can make it! Originally I was going to make raw kale with a dijon dressing, but in the end, decided to keep it simple. I was also feeling lazy by the time we got to the kale. But it worked out, and I think it balanced the heaviness of the rest of the brunch well.

Kyle's Margaritas
To accompany our Breakfast Burritos, The Blackened Brvnch’s amazing bartender, Kyle Bullen, made us some of the best margartias our brvnchers had ever had. There were plenty of “wow’s” and “omg’s” as the first sips were taken.

Scrambled Tofu
As Isa says, tofu was totally meant to be scrambled. This dish is a popular staple at 244 Roebling. So much so that we’ve started making up the spice blend in bulk. This is also why it was an easy choice to use at the main ingredient at our Breakfast Burrito Bar*

Kale, Quinoa & Cranberry Salad
This was a last-minute concoction on Sunday. Kale is probably my favorite dark green, and realizing we needed something a little less rich than maple syrup and cashew butter, I picked up a bunch, sauteed it a little and went at it. Here’s approximately what I did.

Breakfast Apple Torte
We made this with a combination of apples picked from a farm in Germantown, Md. and ones bought at the Union Square Greenmarket.

4 medium apples
1 T cashew butter
1 T arrowroot mixed with 4 T water
